Instructions

    1. Preheat the oven to 325 degrees Fahrenheit (160 degrees Celsius). Use parchment paper to line the bottom of an 8″ (23 cm) springform pan.
    2. Combine the almond flour, sweetener, and melted butter in a medium-sized mixing basin. In the prepared springform pan, press the mixture into the bottom. Preheat the oven to 350°F and bake the crust for 6 to 8 minutes, or until it is slightly browned. Remove the baking sheet from the oven and put it aside to cool.
Filling
    1. In the bowl of a stand mixer, or in a mixing basin with a hand mixer, whip the cream cheese until frothy. Beat in the sweetener until it is completely dissolved.
    2. Combine the sour cream, vanilla extract, and lemon juice in a mixing bowl and whisk until smooth. One at a time, add the eggs and mix just until completely combined, scraping down the sides as required with a rubber spatula. Do not overmix the ingredients.
    3. Fill the par-baked crust with the filling.
    4. Bake the cheesecake for 60 to 70 minutes on the center rack, or until just set. It may still wobble a little in the middle. Turn off the oven and leave the cake in the oven for at least 30 minutes with the door ajar.
    5. Remove the cheesecake from the oven, run a knife along the pan’s edge, and set aside for 1 hour to cool to room temperature.
    6. Cover and chill the cheesecake for at least 8 hours until it has fully cooled before slicing and serving.
Topping
    1. Whisk together the sour cream, sweetener, and vanilla in a medium-sized mixing dish.
Serving
  1. Remove the springform pan’s outer ring as well as the parchment paper. Topping the cake with sour cream is a nice touch.
  2. Whip the cream and pipe it over the edges of the cake, then top with strawberries for a more beautiful cheesecake.
