Keto French Quiche Meal Prep Recipe

This recipe requires minimal ingredients and minimal cooking time, which makes it perfect for those who are struggling to find a quick and delicious breakfast. You can use this recipe as a meal prep to save time, which will help you lose weight.

I like to think that I’m a pretty good cook. I’m also pretty lazy. So when I first started reading about the keto diet, I was skeptical. I mean, I love to eat, but I hate cooking. I loved taking advantage of those week-long keto challenges, but I felt like I was missing out on a lot of really tasty foods and quick meals.

The most traditional of savory pies! An genuine quiche is of French origin, with a filling of a few carefully selected components — cheese, eggs, and, of course, bacon!

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius). Using parchment paper, line an 8” (20 cm) springform pan.

  2. Combine the crust ingredients in a food processor and pulse until a firm dough forms. With your hands or a spatula, press the dough into the pan, covering the bottom and half-way up the sides.

  3. While making the filling, chill the crust.

  4. In a frying pan over medium heat, melt the butter. Add the diced bacon and cook for approximately 10 minutes, turning periodically, before adding the onion, thyme, salt, and pepper. Saute until the onion is soft and the bacon is gently browned. Spread the bacon mixture evenly over the crust using a slotted spoon.

  5. In a medium-sized mixing basin, whisk together the heavy whipping cream, cheese, and eggs until well mixed.

  6. Fill the crust with the egg mixture and cover loosely with tin foil. Bake for 45 minutes on the center rack, or until gently browned. Insert a knife into the middle of the filling before removing it from the oven to check that it is firm and cooked through.

  7. Allow it cool for 5 minutes before slicing, serving, and enjoying!

Tip!

This pie would be a great lunch to bring to work, especially if served with a tasty green salad. It reheats well and may also be served cold.

It’s hard to believe it’s been almost a year since a few of my cousins put me on to the Ketogenic diet, but it hasn’t taken me long to figure out I’m one of the few people that thrives on it. I do well on it long term (at least a couple months). However, I’m still trying to figure out how to make it work for me.
