Although it is a long and involved recipe, it is well worth the effort, and it is also fairly adaptable. My husband has been known to make it with a chicken instead of a pork roast, and the gravy recipe is the same.

Slow-cooked pork roast with a creamy sauce for a keto meal.



Allow time to cook instead of you! In this dish, the slow-roasted beef receives all of the attention. Succulent garlic, savory rosemary, and even the modest bay leaf combine to produce a mouth-watering taste combination. The pan drippings also serve as the foundation for an incredible cream gravy.

  1. Preheat the oven to 200°F (100°C) on low.

  2. Season the meat with salt and place it in a large baking dish. Pour in enough water to cover 1/3 of the meat. Combine the bay leaf, peppercorns, and thyme in a bowl. Cover the baking dish with aluminum foil and bake it for 7–8 hours.

  3. If you’re using a slow cooker, follow step 2 but add just 1 cup of water. Cook on low for 8 hours or high for 4 hours.

  4. Remove the meat from the baking dish and place it in a separate pan with the pan juices.

  5. Preheat the oven to 450 degrees Fahrenheit (220 degrees Celsius).

  6. In a small bowl, grate or finely chop the garlic and ginger. Stir in the oil and pepper until everything is thoroughly combined.

  7. Rub the garlic/herb mixture all over the meat.

  8. Return the meat to the oven dish and continue to roast for another 10–15 minutes, or until golden brown.

  9. Serve the beef thinly sliced with the creamy sauce and your favorite side dishes.
