Instructions

  1. In a heated frying pan, dice the bacon and cook until crispy. Remove from the oven and keep warm. Save the fat that is left over.
  2. Chop the onion finely. Quarter the mushrooms and cook them in the fat with the onion until tender. Remove from the oven and keep warm.
  3. Add butter to the same pan and cook the liver for a few minutes on each side. Combine the bacon, onion, and mushrooms in a large mixing bowl. Stir in the cream, mix, and heat until well warmed. Before serving, add the parsley.
  4. Broccoli florets should be roughly chopped. In gently salted water, cook until soft. Drain and combine with butter and cream cheese in a mixing bowl. Salt & pepper to taste.
  5. Serve the liver with broccoli mash and an onion and mushroom sauce.
